Preparation
Chop the fresh basil.
Method
- 1 Heat the oven to 190°C/375°F/gas 5 (170°C for fan ovens). Divide the butter among 4 heatproof ramekins and place them on a baking tray. Put the tray in the oven for 5 minutes.
- 2 Sprinkle the basil into the ramekins and crack an egg into each one. Season with salt and freshly ground black pepper, then spoon over the cream. Bake for 10 minutes, until the eggs are just set.
- 3 Meanwhile, cut each slice of bread lengthways into 6 soldiers. Cut each slice of Parma ham in half lengthways and wrap each half around a bread soldier.
- 4 Grill for 3-4 minutes, turning once, until the bread is golden and the ham is starting to crisp. Drain on kitchen paper and serve with the eggs.

Fantastic recipe - however 10minutes over cooks the egg. Try 8 or a lower temp.
