Pit and halve the cherries.
- 1 Place the water, sugar and cherries in a small saucepan. Bring to the boil, then simmer for 5 minutes.
- 2 Leave to cool, then strain the resulting syrup into a container and chill in the fridge.
- 3 Put some ice in tall glasses to serve, divide the syrup and lemon juice equally among the glasses and top with soda water.
- 4 Garnish with the sprigs of mint.
