Preparation
Cut the pork leg steaks into equal-sized chunks. Deseed and cut the yellow peppers into chunks. Thickly slice the courgettes.
Method
- 1 In a bowl mix together the BBQ rub, thyme leaves and olive oil, then toss with the pork to coat.
- 2 Thread the pork on to skewers, alternating with the pepper and courgette.
- 3 Cook on a barbecue or hot griddle for 8-10 minutes, turning occasionally, until cooked through.
- 4 Serve immediately with the ketchup.
