Preparation
Slice the tomatoes. Slice the mozzarella balls. Halve the limes. Chop the basil.
Method
- 1 Heat the oil in a large frying pan, add the spinach and cook, stirring, until wilted. Squeeze out any liquid.
- 2 Preheat the grill. On the hob, heat a large frying pan. Add a flatbread and sprinkle with a little water. When heated and crisp, turn over the flatbread and top with a quarter of the spinach and a sliced tomato. Season, then dot with a quarter of the mozzarella.
- 3 Place under the grill for 3-4 minutes. Remove and top with 1 tbsp guacamole, herbs and rocket.
- 4 Keep warm while repeating with the remaining flatbreads and ingredients. Serve each with a lime half.

I got all the ingrediants from M&S. I couldn't find Flat bread so I got Pitta bread instead. I was a bit worried but they brought together nice summery flavours well! I also cooked some chicken briskets with bbq sauce, chopped them in slices and put on top of it. It was even more tasty...! try it!:)
