Mushroom and parmesan tarts

Preparation

Finely grate the Parmesan cheese.

Method

  1. 1 Heat the oven to 180°C/350°F/gas 4 (160°C for fan ovens).
  2. 2 Put the pastry cases on a baking tray and divide the grated Parmesan equally among them. Set aside.
  3. 3 Beat together the eggs and mushroom omelette paste.
  4. 4 Stir through the thyme leaves and season.
  5. 5 Spoon the mixture over the Parmesan and bake for 12-15 minutes until set.
  6. 6 Decorate with Parmesan shavings and rocket leaves before serving.
