Preparation
To drizzle over the finished dish, use some extra of the olive oil.
Method
- 1 Heat 1 tbsp olive oil in a heavy-based frying pan until hot.
- 2 Throw in the peppers and leave them to cook until the skins start to blister.
- 3 Toss once or twice and cook for a couple more minutes.
- 4 Drizzle with a little oil, sprinkle with sea salt, and enjoy with summer drinks.

Cannot beat plain and simple! This is such an authentic Spanish dish - saw a girl devour a plateful in Madrid. Cooked a pile of these for a tapas evening with neighbours and people loved them!
