Parmesan roasties with garlic

Preparation

Leave the garlic cloves unpeeled, but slightly squash them. Peel and cut the potatoes into large equal pieces. Finely grate the Parmesan cheese.

  1. 1 Heat the oven to 220°C/425°F/gas 7 (200°C for fan ovens).
  2. 2 Put the potatoes in a pan of cold salted water. Bring to the boil, then simmer for 5-6 minutes.
  3. 3 Drain and leave in a colander for 1-2 minutes to steam dry, then return to the pan and shake to rough up their edges.
  4. 4 Meanwhile, pour the oil into a large roasting tin and heat in the oven. When sizzling hot, carefully add the parboiled potatoes.
  5. 5 Using a spoon, turn to coat in the oil, then scatter over the garlic cloves. Roast for 15 minutes.
  6. 6 Turn and roast for a further 15 minutes.
  7. 7 Sprinkle with the Parmesan, season and return to the oven for 10 minutes until crisp and golden.
