Finely chop the small red onions. Chop the unsmoked bacon. Finely slice the celery. Cook the penne pasta. Finely chop the parsley. Grate the Cheddar cheese.
- 1 Gently fry the onion, bacon and celery in the oil until softened.
- 2 Add the pasta sauce plus a splash of water. Stir through the cooked pasta and transfer to an ovenproof dish or individual dishes.
- 3 Mix the breadcrumbs with the parsley and sprinkle over the pasta.
- 4 Scatter the cheese generously over the top and bake at 200°C/400°F/gas 6 (180°C for fan ovens) for 10-15 minutes.
