Preparation
Chop the fresh mint.
Method
- 1 Cook the peas in boiling water for 4-5 minutes; drain, reserving just under 1 tsp water per serving being made.
- 2 Stir in the spinach and butter.
- 3 Cover with a lid and cook over a low heat until the spinach has just wilted
- 4 Stir through the chopped mint and serve.
