Red lentil penne with Tenderstem broccoli, chilli and parmesan
Preparation
Slice the garlic cloves. Slice the red chillis. Remove the tips of the tenderstem broccoli.
Method
- 1 Bring a large pan of salted water to the boil, and cook the pack of red lentil pasta as per the packet instructions.
- 2 Meanwhile heat a glug of olive oil in a frying pan, over a medium heat and simmer the garlic cloves and red chillies until the garlic is golden.
- 3 Add the Tenderstem broccoli to the pan, and sauté until tender.
- 4 Toss the cooked pasta through the broccoli and serve with general amount of parmesan shavings and a handful of fresh parsley.
