Preparation
Grate the ginger. Grate the garlic cloves. Zest and juice the lemons. Crush the cashew nuts into a fine crumb. Deseed and finely slice the red chillis. Such as baby corn and sugar snap peas the vegetables.

- 1 Mix the vegetable oil, soy sauce, ginger, garlic and lemon together in bowl to make your marinade. Coat the salmon in the marinade and rest for one hour.
- 2 Heat a pan until hot, add the salmon along with half the remaining marinade and cook fir 3 minutes on a medium heat, turning occasionally.
- 3 Meanwhile, steam the veg for 2-3 minutes.
- 4 Serve the salmon with the veg and a spoonful of sticky soy sauce, topped with the cashews, chilli and a wedge of lemon.

This recipe says 1 cashew?? Yet the method implies it’s cashews, how many cashews is it please?
