Preparation
Thickly slice the ciabatta bread.
Method
- 1 Heat the oven to 150°C/300°F/gas 2 (130°C for fan ovens).
- 2 Cut the larger tomatoes in half or into quarters.
- 3 Put all of the tomatoes in a large roasting tray, in a single layer, and mix with the paste.
- 4 Roast in the oven for 1 hour 30 minutes.
- 5 Grill the ciabatta slices until charred and crisp all over.
- 6 Spoon over the tomatoes and their juices, and garnish with Parmesan shavings and basil.
