Grate the Cheddar cheese. Slice the small red onions. Deseed and chop the tomatoes. Chop the fresh coriander.
- 1 Heat the oven to 200°C/400°F/gas 6 (180°C for fan ovens).
- 2 Layer up the tortilla chips in an ovenproof dish with spoonfuls of the re-fried beans, salsa, cheese, jallapeño chillies, to taste, onion and tomato.
- 3 Bake for 15-20 minutes or until the cheese melts.
- 4 Serve immediately, sprinkled with fresh coriander.
