Peel the cucumber into long ribbons using a vegetable peeler, and discard of the watery middle. Zest and juice 1 of the limes, and cut the other into wedges. Chop the fresh mint. Thinly slice the sugar snap peas.
- 1 Mix together the white wine vinegar, lime zest and juice, sugar and sea salt.
- 2 In a bowl, pour the dressing over the cucumber and toss together. Cover and chill until ready to serve. When ready, move on to the next step.
- 3 Scatter with the mint and sugar snap peas and toss well.
- 4 Serve with the lime wedges to squeeze over.
