Finely chop the garlic clove. Thickly slice the Portobello mushrooms. Finely chop the thyme leaves. Grate the Bavarian smoked cheese.
- 1 Fry the mushrooms in a hot pan with the olive oil for 2 minutes, stirring every so often.
- 2 Add the garlic clove and thyme leaves, and cook for a further 1-2 minutes.
- 3 Cut the ciabatta in half lengthways, then cut each piece into two and lightly toast.
- 4 Divide the cheese over the top of the hot toasted bread so it starts to melt, then top with the mushrooms and any juices from the pan.
Absolutely gorgeous, simple and a great quick snack. Highly recommend.
