Preparation
Slice the onions. Crush the garlic cloves. Slice the red peppers. Slice the yellow peppers. Roughly chop the fresh coriander.
Method
- 1 Grill the sausages for 8-10 minutes, turning occasionally, until golden and cooked through. Slice them into bite-sized pieces.
- 2 Meanwhile, heat the oil in a deep frying pan and add the onion, garlic and peppers. Cook over a gentle heat for 10-15 minutes, stirring occasionally, until tender and golden.
- 3 Add the paprika and cook for 1 minute, then add the tomatoes and 2 tbsp water. Cook gently until the tomatoes have burst. Season and stir in half the coriander. Stir in the sausages.
- 4 Make 4 indentations in the mixture and crack an egg into each one. Cover with a lid and cook over a gentle heat for 6-8 minutes, until the eggs have just set. Scatter over the remaining coriander and serve.

My husband was not too sure about this when I described them to him- he was worried they would be too slimy. However, I persevered and we had them for a Sunday brunch. Needless to say they were delicious. Simple ingredients that were really tasty and filling!! Will be having again!!!

Very tasty dish and an easy to follow recipe. I used a tin of chopped tomatoes to avoid the skin on the cherry tomatoes. Whenever I use tomatoes, I like to add Worcester sauce and Tabasco. My husband and I enjoyed this dish with crusty bread. Will definitely make it again.

Loved this recipe - easy to put together after dinner and lots of veg/salad to keep things healthy. Left out some of the oil (just used a bit of the sausage juice) to keep it healthier so a big extra water was needed. Bright colourful tasty dinner!

This was a good dish, but not the proper Mexican huevos rancheros. To get it a bit closer to authentic, serve each egg on a crispy tortilla, sprinkle pico de gallo, avocado, feta cheese, and black beans. Add salsa for a kick.
