Lime, pistachio and courgette loaf

Zest and juice the limes. Coarsely grate the small courgettes. Soften the butter. Sift the icing sugar. Zest the limes.

  1. 1 You will need a 900ml loaf tin lined with parchment or greaseproof paper.
  2. 2 Preheat the oven to 170’C (150’C fan) gas 4. In a large mixing bowl, whisk together the eggs, sugar, oil, yogurt and vanilla extract.
  3. 3 Stir in the lime zest and juice together with the grated courgette. Now sift in the flour and baking powder and add all but 2tbsp. of the nuts. Fold together well to combine all the ingredients. Spoon the mixture into the loaf tin.
  4. 4 Bake for 45-50 minutes or until well risen, golden brown and springy to the touch. Cool slightly in the tin before inserting the loaf onto a wire rack to cool completely.

For the Frosting

  1. 5 Beat together the cream cheese and butter with the lime zest. Beat in the icing sugar to form a smooth frosting. Take care not to over-beat otherwise the mixture becomes runny.
