Medley of Spring Vegetables

Trim the purple sprouting broccoli. Trim and slice the salad onions into 4cm pieces.


  1. 1 Cook the carrots in a large saucepan of boiling water for 2 minutes.
  2. 2 Add the broccoli and continue to cook for a further 3-4 minutes. Drain and refresh under cold running water.
  3. 3 Heat the oil and butter in a large frying pan, add the salad onions and mange tout and sauté for 2-3 minutes.
  4. 4 Add the broccoli and carrots to the pan to heat through, then serve.
