Oakham turkey with a pork and mushroom stuffing

For an extra-special centrepieces, use a ready-to-cook M&S Oakham turkey, which comes with a pork and mushroom stuffing, aromatic herb butter and a lattice of pancetta. This ready-to-cook turkey is roasted in its own bag to seal in the juices.

  1. 1 Heat the oven to 180°C/350°F/gas 4 (160°C for fan ovens).
  2. 2 Cook the turkey according to pack instructions.
  3. 3 To test that it's thoroughly cooked, insert a skewer into the thickest part of the thigh; the juices should run clear. Check both sides to ensure that the bird is evenly cooked. If the juices are pink, return the bird to the oven and check at 10-minute intervals.
  4. 4 Remove from the oven, cover with foil and allow to rest for up to 1 hour before carving. Do not reheat.
