Finely chop the anchovy fillets. Finely chop the garlic cloves. Zest the lemons. Finely chop the rosemary.
- 1 Mix together the anchovy, garlic, oil, lemon zest and rosemary. Season and use to coat a rack of lamb.
- 2 Roast at 200°C/400°F/gas 6 (180°C for fan ovens) for 15-20 minutes, or until cooked to your liking.
- 3 Leave to rest before serving.
